Vegetarian Sriracha Chili

What You'll Need:
-1 can of diced tomatoes
-1 can of black beans
-1 can of kidney beans
-any other beans that you love!
-package of vegetarian imitation beef crumbles
-1 chili pepper
-red/green pepper
-1 small onion
-1 packet of taco seasoning
-1 tbsp of olive oil
-2 tbsp of Sriracha (if you do not want your chili to be as spicy, then limit to 1/2 or 1 tbsp.)
*green onions or chives & grated pepper jack cheese to top
What You'll Do:
-In a large frying pan on medium heat cook the chopped onion and peppers (about 5 minutes until soft)
-Add diced tomatoes, black beans, kidney beans & and others you've decided on and mix
-Add package of vegetarian imitation beef, taco seasoning and Sriracha
-Mix and set pan to simmer
*It is a good idea to add the vegetarian imitation beef crumbles last because unlike regular meat, it is already cooked and just needs to be heated up!
- Let chili simmer for about 5-10 minutes, or until thoroughly mixed, cooked & lookin' good!
- Grab a Bowl, top with some freshly cut green onions or chives, some grated pepper jack cheese and wa-lah!

Vegetarian-Friendly Hobo Empenadas

What You'll Need:
-1 medium sized sweet potato
-1/2 pkg of soy chorizo (available at Trader Joes)
-1 pkg of Pillsbury Cresent Rolls
-Chavrie Goats Cheese (or any preferred spreadable cheese)
What You'll Do:
-Cut the sweet potato into cubes and boil until soft
-Meanwhile cook soy chorizo in a small pan until browned
-Mash the sweet potato and add the chorizo, mix well and set aside
- Take each triangle of the Pillsbury Crescent Rolls and spread thinly with the Chavrie
-Place a heaping spoonful of the potato/chorizo mix towards the end of the roll and roll!
-Bake at regular temperature and minutes as crescent roll package says
-Take out & Serve immediately!!
